Jensen, who was chosen last June in the first round of Major League Baseballs Amateur Draft by the Chicago Cubs, posted a 12-1 record this past spring at Fresno State.
The criterion for Athlete of the Year in the Mountain West Conference also requires good academic standing, character and conduct on and off the field.
The last player from Fresno State to be named the Mountain West Conference Male Athlete of the Year was current Raiders quarterback Derek Carr in 2014.
Named the Mountain West Conference Pitcher of the Year, Jensen was a first team all conference selection, striking out 107 in 100 innings of work.
The hard-throwing right-hander won his last nine starts, throwing 7 2/3 innings in the Bulldogs win over UC Santa Barbara in the NCAA tournament, the programs first appearance since 2012.
Jensen was named to the ABCA/Rawlings West Region Team and was a second team All-American. Fresno State won the conference title and Mountain West tournament.
